Doesn't the name Red Velvet sound incredible? And what if you add the simple word CAKE to the end of it.....doesn't it just make you coo and caaa or is it oooo and ahhhh or perhaps if you're like me (especially when you're on a diet) just plain drool!
My mom's birthday was last Saturday and randomnly we had talked on a few occasions recently about Red Velvet Cake and that it was one of her favorites (I had no idea) so when her birthday came around and she and my dad were coming to town I thought I should make this for her. I thought I had my Aunt Maxine's recipe but I didn't :(. My mom looked for hers (having no clue why I needed it) but she wasn't able to find it before she headed out of town so I went on an internet search for one like Aunt Max's. My mom had sent me one from the Food Network that she thought was close but it just wasn't doing it for me as I read over it so I went to my faithful standby......good 'ol Martha! I got the reciepe from one of her wedding issues and found the recipe online so I could share the Red Velvet Cake and the cream cheese frosting recipes here.
I was so excited to try this!
You can make Red Velvet as red as you want
but after I went through a whole thing of red food coloring...I stopped. (it actually called for 2 tablespoons).
Instead of making 2 8" cakes and slicing the baked cakes in half for a 4-layer cake, I opted for 3 9" layers and no slicing!
I gasped a little when the recipe for the frosting said it made 2 quarts....I mean I love frosting but surely this was too much...no? I mean 2 quarts of frosting called for 4 boxes of creams cheese, 1 cube of butter and 2 lbs of powdered sugar.....could I really do that to my family?
I cut the recipe in half and barely had enough....but 4 boxes of cream cheese????
But my mom loved it and that's what mattered!!!
It was so tasty - my mom sent me a cute email yesterday saying "I'm eating the last piece of cake right now even though I have to weigh in tomorrow...I don't care it was worth it"! That made my day!
You can make red velvet cake frosting many different ways so next time I think I'll choose a different frosting and not this cream cheese one even though it was incredible.
But the cake.......oh my heavens it was sooo moist and so good so I highly recommend it!!
And oh yes I did.....I did I did I did try some of the cake....it was day 14...cheat day thank goodness!
