I don't know about you but when I bake I LOVE to add a little zest to things and lemon zest to my blueberry coffee cake - uh yummmers!
I love this cake, my BFF LOVES this cake (I think more than me) and even my Mama LOVES this cake so much that she asked me for the recipe and has made a few times. Now that's a HUGE compliment coming from a woman who is a fabulous baker and taught me how to bake!
I love it and this one my friend I will share {smile}.
Please note my comments at the bottom that I almost ALWAYS double this recipe and bake in a 9x13.
Lemon Blueberry Coffeecake
(adapted from a Pampered Chef Recipe)Cake
1 3/4 cups flour
1 cup sugar
2 1/2 teaspoons baking powder
1/4 salt
2/3 cup milk
1/3 cup vegetable oil
1 egg
1 cup fresh or frozen blueberries
2 1/2 teaspoons lemon zest
Streusel
1/4 cup butter, softened
1/2 cup sugar
3/4 cup flour
1 tsp cinnamon
Preheat oven to 375 degrees. Combine flour, sugar, baking powder and salt. Add milk, oil and egg, mixing just until dry ingredients are moistened. DON'T OVER MIX - this is so important in baking if you are a mixer-aholic please try to resist :).
Gently stir in blueberries and lemon zest. Pour batter into a 9" square pan.
To prepare the Streusel:
Mix together the butter and sugar until well blended. MAKE SURE to do these two together first or crumbly streusel for your yummy cake.....not so much. It doesn't work.
Then add flour and cinnamon and mix until crumbly.
Sprinkle streusel topping evenly over cake.
Bake for 30-35 minutes.
That pic doesn't do it justice - let me just say it's incredible!!!
Okay now about the streusel.....the amounts here are 4x times what the recipe calls for (I had to adapt it) and I always double my recipe and then I times 8 the streusel...hehe. Don't choke or gag or laugh I do I do - ask anyone who's had it, the more the BETTER so don't be shy and sprinkle it like dust just dump it on there baby dump!!!
*If you double the recipe just double the streusel as well - don't do it x8 as I've listed it with the increased amounts.
